The flavour:
Our Micap Mustard flavour is produced using natural mustard seeds. In the specific production process the Mustard flavour develops a characteristic heat and flavour profile. The fine heat of the Mustard flavour is indispensable in many products in Europe, in the United States or in the Asian kitchen. Alongside the natural source the mustard flavour could also be produced in an artificial form. Mustard oil is based on a relatively simple molecule. This fact enables that the artificial flavour to have a very similar taste compared with the flavour from natural source so that this raw material provide a more cost efficient alternative.
Benefits: The heat of standard mustard flavour is very sensitive. The taste of such mustard flavour quickly loses its intensity in applications and over shelf life, this then causes detrimental product changes. Micap Mustard is heat and storage stable and does not change its flavour profile over shelf life.
Range of application: Micap Mustard is an excellent ingredient for sauces eg. mayonnaise, horseradish, wasabi or mustard dressings, ready meals, sausages, coatings and batters.
